Why not try a strawberry sorbet? Light and sophisticated, this is an ideal dinner party dessert that’s easy to prepare. All you need do is to crush your strawberries and rub them through a nylon sieve to extract the seeds.
Then stir in a little lemon juice (juice of 2 lemons for 1 kg of fresh strawberries), and then whisk in 250 gm of icing sugar. Simply pour the mixture into an ice-cream maker and churn until frozen. If you don’t have a machine you can pour into a tray and then scratch it up into shards when it is almost solid.
Freeze again for an hour or so before serving. This method produces a slightly more crunchy texture, rather in the manner of an Italian granita.
